Michelino Gioia

Michelino Gioia joined The Cesar at LA POSTA VECCHIA in 2003, after working at the Baglioni in Bologna, the Four Seasons in Milan and the Hotel Eden in Rome. In the kitchens of Alain Ducasse and Gaetano Trovato, he developed a global vision of cooking and catering improving his perfectionist care for every detail: from the choice of raw materials to the atmosphere in the dining room.
Michelino Gioia is an example of passion, creativity, technical skill, balance, energy and enthusiasm for his work. He distinguishes himself for his innovative technique transforming traditional Italian recipes into contemporary gourmet creations.
Combining flavours and colours in a harmonious way, our chef creates unique recipes, following two fundamental rules: respect for the natural aspects of products and strength of the ties with the land. The dishes he prepares follow the seasons, most of the ingredients are grown in the restaurant’s own organic garden. The goal of our chef is to offer his guests an original culinary experience: natural flavours and an unforgettable gourmet moment. His Mediterranean dishes share lightness and a perfect harmony between fragrances, flavours and colours.
